Vegan Pumkin Pie and other Happenings

Turkey day is around tomorrow and I've been baking all night. Roasted up my tofurky and I'm waiting on the pie. I basted my tofurky in an alteration of the recipe on the box. I used olive oil, soy sauce, brown sugar, rosemary and wine, along side veggies.

Pumpkin Pie:
I found this searching for vegan pumpkin pie recipes (so I can share with friends). I also altered this from this recipe http://www.vegetariantimes.com/recipes/9598 and http://veganconnection.com/recipes/pumpkin_pie.htm. I did not mix the spices I bought a bulk baggie of organic pumpkin pie spice from Wheatsville .
  • 2 cups canned pumpkin
  • 1 cup almond milk
  • 3/4 cup light brown sugar
  • 1/4 cup cornstarch
  • 1/2 Tbs. dark molasses or to taste
  • 1 tsp. vanilla extract
  • 2 1/4 tsp. pumpkin pie spice
  • 1/2 tsp. salt
  • 1 dash of extra cinnamon 
Mix all ingredieants in a large bowl and pour in pie shell. Bake at 450F for 10 mins. and continue at 350F for 50 mins. Cool, refrigerate and eat next day. Yum!
I hope this comes out good with these modifications.

P.S. Bleach Update. Yellow!!! (The picture makes it look a bit worse) I got a compliment from a 13 yr. old girl, it kinda made me feel better about it, she was sincere. Hopefully tomorrow I'll get the chance to do it all over again, now Manic Panic's Flash Lighting kit
